Michael and Lillie Gillespie are completing the final phases of work leading up to the opening of their new restaurant, G’s Place, in Vardaman.
“This is something we’ve thought about doing a long time,” said Michael Gillespie, principal at Bruce High School. “We had hoped to get something established like this for our retirement years, but everything fell into place for this now.”
The restaurant is going into the former home of Sweet Potato Specialties, which owner James Winter closed late last year.
Gillespie said they are finishing renovations to the building and hope to host a grand opening in a couple of weeks.
The menu will be primarily soups, salads and sandwiches with some homemade treats.
“No fried stuff, but we’ll be using a lot of family recipes for sides and different menu options,” Gillespie said.
They plan to be open for lunch and supper Monday-Saturday. They will also explore catering opportunities and install a gift section.
“We’re really excited about it. It’s been a lot of work getting to this point,” Gillespie said. “We think we’re going to have a nice place where if you’re in a hurry you can get something to go, but if you’re not you can stay a while, relax and visit.”
